This watermelon cucumber salad is so easy, so delicious, and so refreshing. I made a big bowl of it the other day and have been snacking on it ever since - it's absolutely perfect for those hot summer evenings.
Since the star of this recipe is a watermelon, here's a quick tip on finding the best watermelon possible:
The watermelon should feel heavy and have a yellow spot on it. This yellow spot forms from the watermelon sitting on the ground, and when it is a creamy yellow, it's ripe!

WATERMELON CUCUMBER SALAD WITH LEMON, MINT AND FETA
- half of a a medium seedless watermelon, cubed
- one cucumber, sliced
- handful of mint leaves
- juice from one lemon
- 1/2 cup of feta
- Place watermelon, cucumber, mint leaves, and lemon juice in a large salad bowl. Toss to combine.
- Sprinkle feta on top and gently mix in.
- Serve and enjoy!
